On a rainy and cool Florida day, I completed a bunch of house projects (a.k.a. taxes, cleaning, and office organization), worked out, and then watched another fantastic film, St. Vincent.
Honestly, the elliptical rarely gets any usage because I prefer to run outside or go to the gym, but today I decided to go for it! I opted for the “Incline” workout for 20 minutes varying in incline and resistance. At the end of 20 minutes, I burned over 300 calories according to the machine (note: I don’t trust the accuracy on the calorie count). After cardio, I did some upper body and abs.
As for dinner, I cooked up an easy salmon dish with veggies and Trader Joe’s quinoa. It definitely hit the spot!
Easiest Baked Salmon
Ingredients:
1lb Salmon
2 tbsp Olive Oil
Salt to taste
2 tsp Onion Powder
2 tsp Garlic Powder
2 tsp Paprika Powder
2 tsp Dried Italian Seasonings
Instructions:
Pre-heat oven to 350 degrees. Lightly coat salmon with olive oil. Sprinkle salt to desired taste. Evenly shake spices on top of entire fish. Bake for 10 minutes. Let sit to cool for 2 minutes. Eat and Enjoy!
As for the entertainment portion of this Saturday night, St. Vincent is a film not to overlook! We rented it from Redbox after reading good reviews on Rotten Tomatoes. The film stars Bill Murray, Melissa McCarthy, and Naomi Watts. The film was so moving, I even cried! It takes a lot for me to shed tears during a movie–I do have emotions! Win!

Agree re: the movie. Question re: dinner – how do you cook those power greens? What was in the pan, a bit of water, some garlic, white wine? Thanks

It’s not very fancy–just a little olive oil spray from my Misto and cook on medium heat. Cook time is only 3 minutes or so. Super fast so keep an eye on the greens or they will wilt down to nothing!
