TRAVEL TIP OF THE DAY: Hydration is especially important to keep in mind while traveling! Keeping healthy and hydrated is not always an easy thing to do while on the go. Dehydration increases in-flight due to high altitudes and low humidity. Also, salty foods from restaurants, snacks, and airplane food will dehydrate your body faster than you think. Here are my recommendations: Whenever you order a beverage, ask for a water in addition to your beverage of choice. Secondly, remember to pack an empty water bottle like a Nalgene or Tervis. You can fill it up once you pass TSA Security at a water fountain(bubbler!) or restaurant–Starbucks is always happy to fill up my water bottle.
Hi Friends! I hope everyone is having a wonderful week so far! I am getting pretty pumped about my weekend getaway to Walt Disney World. Last time I had a family vacation in Disney was probably over 15 years ago. I’m looking forward to exploring all the new additions at the parks as well as reliving all the fond memories and special moments with my family!

I’m not using this blog as a complete food diary. I do not share or blog about everything I eat, but I do love to cook, bake, and entertain. Let me know if you want more or less of what I eat on a normal basis.
Tuesday night we celebrated Papa’s birthday at Rosebud’s Restaurant in Osprey, Florida. Osprey is nestled between Venice and Sarasota. Rosebud’s–Papa’s favorite place to dine for a special occasion–food and service was excellent. Daniel and I shared Orange Roughy (white fish) and Steak Kebabs (not pictured). The Orange Roughy totally exceeded expectations–very light and tasty. Nana and Papa ordered Filet Mignon with Lobster Tail and Seafood Risotto. For dessert, Papa received a complimentary birthday treat. We all had a great time celebrating Papa’s special day!
No room for dessert this time, but there is no harm in looking! I needed to check out their famous carrot cake! Holy moly!
Over the weekend, I made this delicious and low-calorie salmon recipe. I grocery shop at Costco, therefore, I always have leftovers. We are leaving for Disney early tomorrow morning so I wanted to eat up the leftovers in the fridge. I heated up the salmon in the toaster over for repeat amazing dinner (minus the quinoa)!
Balsamic Glazed Salmon Recipe (Inspired from AllRecipes.com)
Ingredients:
1.5lbs Salmon Fillet
4 Cloves Fresh Garlic(minced)
1 tbsp Honey
1/3 cup Balsamic Vinegar
4 tsp Dijon Mustard
Salt and Pepper to taste
1 tbsp Dried Italian Seasonings
Directions:
1. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil, and spray with non-stick cooking spray. Or, use SILPAT.
2. Coat a small saucepan with olive oil spray. Over medium-low hear, cook and stir garlic until it softens, about 3 minutes. Mix in vinegar, honey, mustard, and pepper. Simmer, uncovered, for about 3 minutes. Place salmon on baking sheet and lightly salt. Brush salmon with 3/4 of the balsamic glaze, and sprinkle Italian Seasonings.
3. Bake for 10-12 minutes, or until salmon flakes easily with fork. While still on the baking sheet, brush remaining glaze on the salmon. Now, it’s ready to serve!
